Kappa carrageenan (卡帕角叉菜胶) is a natural food gelling agent extracted from red seaweed. It is tasteless and odourless and yields a strong gel often described as firm and brittle in the presence of potassium ions, and may have syneresis.


Kappa carrageenan is a highly versatile ingredient, especially with meat. It is also commonly used in conjunction with iota carrageenan in molecular cuisine.
